What Are Cloud Eggs?

Cloud eggs are a delightful twist on traditional cooked eggs, where the egg whites and yolks are separated and cooked differently to create a unique texture and presentation.

The egg whites are whisked until fluffy and firm, forming soft peaks reminiscent of clouds, hence the name. This fluffy base is then gently baked until just set, and the yolks are carefully added back on top and baked until the desired doneness.

This cooking technique not only creates a delicious-looking dish but also a light and airy texture in the whites, with the creamy richness of the yolk perfectly complementing it.

What’s In This Cloud Eggs Recipe?

  • Large eggs:The foundation of this simple recipe, providing not just the structure but also a rich taste. You’ll be separating the yolks from the whites, so quality matters!
  • Asiago cheese:Adds a nutty and sharp flavor that complements the fluffy egg whites beautifully. Feel free to experiment with cheddar or your favorite cheese for a personalized touch.
  • Fresh chives:These bring a mild, onion-like flavor that adds a fresh, vibrant touch to the dish. Italian seasoning can be a great alternative if you’re looking for a different flavor profile.
  • Salt and black pepper:Essential for enhancing all the flavors in the cloud eggs, salt, and pepper are the classic seasonings that tie everything together. Adjust according to your taste preferences.

Substitutions and Variations

  • Add fresh toppings– Minced parsley is another really great topping that you can add.
  • Add spice– A squirt of hot sauce is the perfect way to add some spice!

  2. Place the baking sheet on the center rack of the preheated oven and bake for 3 minutes.
  3. After 3 minutes, remove from the oven and carefully transfer reserved yolks into the indent of each mound.
  4. Sprinkle each mound with half of the remaining cheese and fresh chives.
  5. Return to the oven and bake for another 3 minutes or until the yolks are set and the egg whites are golden brown.
  6. Remove egg clouds from the oven and sprinkle with the remaining cheese and chives before serving immediately.

*For best results, reserve the egg yolks in small, individual dishes instead of one larger bowl.

Recipe Tips

  • Be Gentle:When folding in cheese and chives into the egg whites, do so gently to avoid deflating the mixture. This is what gives the cloud eggs their signature fluffiness.
  • Even Sizes:Try to make the whipped egg white piles on the baking sheet as even in size as possible. This ensures they cook uniformly and finish at the same time.
  • Room for Yolks:Make the indents in the center of each whipped egg white pile large enough to hold the yolk but small enough so it doesn’t spread out too much.
  • Pre-crack Eggs:Cracking each egg into a separate small dish before adding the yolk to the cloud ensures that no broken yolks ruin the aesthetic of your dish.
  • Oven Watch:Keep a close eye on the eggs during the final minutes of baking to prevent overcooking the yolks if a runny center is desired.
  • Serving Suggestion:Serve immediately after baking for best texture and taste — cloud eggs are most delightful when enjoyed fresh from the oven.
  • Creative Toppings:Don’t hesitate to experiment with different cheeses and fresh herbs to find your favorite combination.

Recipe FAQs

Why are my cloud eggs not fluffy?

You need to be sure that you beat them long enough so that you get stiff peaks. Otherwise, they won’t be fluffy.

How do I know if eggs are good to use?

Add an egg to a glass of water. If the egg sinks, it’s good to use in a recipe. If the egg floats, toss it out!

Can I make cloud eggs ahead of time?

While cloud eggs are best enjoyed immediately after cooking for the freshest taste and optimal texture, you can prepare the whipped egg whites and cheese mixture ahead of time. Store it in an airtight container in the refrigerator for up to 24 hours. When ready to bake, follow the baking instructions, adding fresh yolks before placing in the oven.

Is it possible to make cloud eggs without cheese for a dairy-free option?

Absolutely! Cloud eggs can be made without the addition of cheese for those who prefer a dairy-free version or simply do not like cheese. The key to fluffy cloud eggs lies in whipping the egg whites to stiff peaks, so as long as that is achieved, you can customize the recipe to suit dietary preferences or restrictions.
